Morris Biton is one man whose history tells the story of the entire market. Beginning in the Mahane Yehuda market, he began a small food stall opposite one of the butchers in the market, in the late 1960s. When a customer arrived, Morris screamed to the beat "Simon, cut a steak!" And made the fresh meat that the butcher passed him on coals. Over the years, Biton has moved to nearly ten different places in the market, and his customers know that if he disappears from his permanent place, someone asks "Where is Morris?" And we will already direct them to his next Basta.
